Ingredients
- 4 onions, red, medium, sliced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tbs honey
- 2 tbs balsamic vinegar

4 tbs olive oil, plus 2 tbs for the bread

1 teaspoon salt

1/4 tsp black pepper
- 1 tsp thyme
- 1/2 loaf French baguette, sliced into 1-inch thick circles
- 1 1/2 cups grated Swiss or Gruyere cheese
Directions
Heat the olive oil in a deep saucepan. Sauté the onions for 5-7 minutes until golden brown. Add the garlic and stir to combine the flavors.
- Add the honey and let the onions caramelize without stirring for 3-4 minutes, then add the vinegar to deglaze the pan.
Add the broth. Season with salt, thyme and pepper. Bring to a simmer and cook for about 15 minutes.
In the meantime, preheat the oven's grill to 390°F. Brush both sides of the bread slices with olive oil. Place on the rack of the oven. Toast until golden. Remove from the oven, top with the grated cheese and return to the oven for 2 more minutes until the cheese melts.
- Serve the soup hot, topped with the bread.
