
Hey everyone! It's summer, and that means its time to talk about one of my all-time favorite recipes - Marinated Mushroom Pasta Salad. This creamy and filling salad is packed full of flavor, perfect as a side dish during barbecue season or as a light lunch during those hot summer days. Not only is it delicious, this recipe is also incredibly easy-to-follow, making it perfect for busy weeknight meals or laidback weekend lunches. Ingredients
- 2 cups bow tie pasta, cooked
- 1/2 cup olives, black
- 1/2 cup red peppers, roasted, chopped
- 1 tbs dill, chopped
- 1 tbs parsley, chopped

1/4 tbs pepper, black
- 2 cups mushrooms, champignon, small, halved

1/4 cup olive oil
- 2 tbs balsamic vinegar
- 1 garlic clove, minced
- 1 tsp honey
- 1 tsp thyme
For the marinated mushroom:
Directions
Heat 1/4 cup of olive oil in a saucepan over low heat and add the garlic, honey and thyme. Allow them to steep for 2 minutes them pour over the mushrooms and let them marinate for 10 minutes.
In the meantime, in a salad bowl combine the bow tie pasta with the olives, red roasted peppers, dill and parsley. Season with salt and pepper.
- Add the mushrooms and mix to incorporate the flavors. Serve at room temperature.
