Ingredients
- 8 oz minced beef
- 1/3 cup corn
- 1/3 cup feta cheese
- 2 taco shells
- 1/2 avocado, sliced
- 1/2 onion, red, chopped
- 1 garlic clove, minced
- 1/3 cup olive oil
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp pepper, black
Directions
- 1. Heat 2 tbs of olive oil in a non-stick pan. Sauté the beef with the onions and corn for 10 minutes, seasoning with paprika, salt and pepper until cooked through.
- 2. In a blender process the feta cheese with the remaining olive oil, garlic and a pinch of pepper to make a thick dressing.
- 3. Fill the taco shells with the beef mixture. Slice and add the avocado.
- 4. Drizzle with the feta dressing and serve hot.
