1. Combine
the avocado with the walnuts, pecorino, garlic, olive oil,
limejuice in a blender until smooth.
2. Season
with salt and pepper and serve at room temperature or store in an airtight jar
with an extra tablespoon of olive oil
on top to preserve its vibrant green color.
