Avocado & Baked Plantain Saladisimo
- 1 plantain
- 1 red peppers
- 1 avocado
- 2 tomatoes
- 2 cups baby spinach
- 1/2 lime, juice
- 4 tbsolive oil
- 1 tsp spices
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1. Preheat the oven to 375°F.
- 2. Thinly slice the plantains, season with salt, pepper, and spices, drizzle with a little olive oil and bake in the oven for 20-30 minutes until tender.
- 3. In the meantime, chop the peppers, avocado, and tomatoes.
- 4. Mix the baked plantains with the peppers, avocado, tomatoes, and spinach, drizzle with the remaining olive oil and limejuice, adjust the seasoning and serve immediately.
