- 1 plantain
1 red pepper
- 1 avocado
- 2 tomatoes
- 2 cups baby spinach
- 1/2 lime, juice
4 tbs olive oil
- 1 tsp spices
1/2 tsp sea salt
1/4 tsp black pepper
- 1. Preheat the oven to 375°F.
2. Thinly slice the plantains, season with salt, pepper, and spices, drizzle with a little olive oil and bake in the oven for 20-30 minutes until tender.
- 3. In the meantime, chop the peppers, avocado, and tomatoes.
