Ingredients
- 15 oz chicken breast, sliced
- 10 oz sweet potatoes, diced

2 cups chickpeas, canned
- • 1/4 tbs tahini
- • 2 garlic cloves

• 4 tbs olive oil
- • 1/2pc lemon juice
- • 1 tsp cumin, ground

Diced cucumber/avocado/ tomatoes/onions/seasonal veggies

Preheat the oven to 370°F.
Coat the chicken and sweet potato dices with olive oil, season with salt and pepper and bake for 30-35 minutes until cooked through.
In the meantime, make the hummus by processing the chickpeas with the tahini, garlic, olive oil, lemon juice, and cumin in a blender and process until smooth. Season with salt.
- Spread the hummus on a serving plate. Top with the chicken and sweet potatoes, adding the juices from the pan as well.
Add the diced cucumber drizzle with extra olive oil and serve hot.
