1 1⁄2 cups Arborio rice
2 cups milk, dairy or plant
1⁄4 cup honey
1/3 cup dark chocolate
1/5 cup extra virgin olive oil
3 tablespoons cocoa powder, unsweetened
1 teaspoon vanilla extract
1/6 teaspoon salt
1 cup fresh fruit to garnish
Heat the milk with the cocoa, rice, vanilla, salt and honey. Bring to a gentle simmer to reach a porridge-like consistency adding water if needed and stirring constantly.
Remove from the heat and fold in the olive oil and dark chocolate, stirring to incorporate to the mix.
Allow to rest for 5-10 minutes.
Serve warm or cold topped with fresh fruit, nuts or seeds.
