- 4 large tomatoes
2 green bell peppers
½ cup feta cheese, crumbled
½ red onion
½ cup parsley
4 tbsp olive oil
½ tsp sea salt
1. Chop the tomatoes. Slice the peppers and onion. Cut the cucumber in half lengthwise and slice it into half-moons.
Mix everything in a large bowl and season with salt, chopped parsley, and oregano.
Crumble the feta cheese on top and drizzle 4 tbsp of olive oil. Toss everything together to coat.
