Ingredients
4 cups cauliflower, grated with a cheese grater
- 1/2 chicken breast, diced
- 1 orange, flesh cut into fillets
1/2 cup celery stems, coarsely chopped

4+2 tbs olive oil

1/2 tsp salt

1/4 tsp black pepper
Directions
Heat the olive oil in a frying pan and sauté the chicken for 5-7 minutes, until completely cooked through, seasoning with salt and pepper.
- In the meantime, bring a pot of salted water to a boil and blanche the grated cauliflower for 1-2 minutes.
Mix the cauliflower with the celery, chicken and oranges and drizzle with 2 tbs of olive oil.
- Adjust the seasoning and serve at room temperature.
