Ingredients
- 1 chicken, jointed into 8 pieces
- 1 onion, finely chopped
- 1 cup walnuts
- 1 quince
- 1 lemon, juice

1/4 cup olive oil
- 1 cinnamon quill
- 1 tbs honey
- 1/2 tsp ground ginger
- 1/2 tsp cumin

1 tsp salt

1/2 tsp black pepper
Directions
Peel and cut the quince into wedges. Drizzle with the lemon juice. Bring a pot of water to a boil and steam the quince for 20 minutes.
Heat half the amount of the olive oil in a pan and sauté the chicken pieces to brown them for 10 minutes. Add the onions, walnuts and spices.
Heat the remaining olive oil in a pan. Add the honey and cook over high heat to caramelize, then add the quince wedges to caramelize them.
- Toss in the chicken and onions, stir to absorb the flavors and cover with hot water. Simmer for 50 minutes until the water is reduced to a thick sauce. Serve hot.
