Recipe-328-Chocolate Olive Oil Mousse
Another classic reinvented with olive oil. Soft and airy texture-wise but with an incredibly rich flavor that balances between bitter and sweet to make the most voguish dessert. Make sure to add pinch of salt, it makes a difference and garnish with seasonal fruit or caramelized nuts to make it even more special.
Melt the chocolate in a double boiler until glossy and smooth (or alternatively microwave it in a heat-proof bowl).Remove from the heat and fold on the olive oil stirring gently with a spatula to incorporate to the mix. Set aside.
- Using an electric mixer, whisk the egg whites with a pinch of salt until they hold firm peaks. Set aside.
- Refrigerate for 20 minutes and serve cold optionally garnished with fruit.
