Melt the chocolate in a double boiler until glossy and smooth (or alternatively microwave it in a heat-proof bowl).Remove from the heat and fold on the olive oil stirring gently with a spatula to incorporate to the mix. Set aside.
- Using an electric mixer, whisk the egg whites with a pinch of salt until they hold firm peaks. Set aside.
Whisk the egg yolks with the sugar and the remaining salt in a separate bowl until it doubles in volume. Gradually pour in the chocolate-olive oil mixture and then fold in the egg whites.
- Refrigerate for 20 minutes and serve cold optionally garnished with fruit.
