- 10 oz chicken breast, sliced
- 2/3 cup lentils
- 1/3 cup parsley, chopped
- 2 garlic cloves, sliced
- 1/2 lemon, juice
3 tbs olive oil for cooking plus 4 tbs for the dressing
2 tsp salt
1/2 tsp black pepper
Bring a pot of water to a boil and cook the lentils until tender, for about 20 minutes.
- When the lentils are done, toss them in the pan with the chicken, and sauté for 1-2 more minutes to combine the flavors.
Make the dressing by whisking together the remaining olive oil with the lemon juice, parsley and garlic.
- Transfer in salad bowl, season to taste and finish with a few tablespoons of the parsley dressing.
