Ingredients
- 2 apples, granny smith, diced

1/5 cup olive oil
- 2 tbs honey
- 1 tsp cardamom seeds, crushed in a mortar
- 2 cups earl grey tea, brewed and chilled
- 1 cup apple juice
- 1 cup ginger beer
- Ice
Directions
Heat the olive oil in a pan and sauté the apples for 5 minutes. Add the honey and cardamom seeds and simmer for 5 more minutes.
- Divide the compote into 4 tall glasses.
- Add ice and pour in the tea, apple juice and ginger beer, dividing equally into the 4 glasses.
- Let the compote sink to the bottom and serve cold.
