Ingredients
- 1 cup lentils
- 1 cup tuna, canned
- 3 cups vegetable broth
- 1 1/2 cup sweet potatoes, diced
- 1/2 cup peas
- 1/2 cup tomato sauce
- 1/4 cup rice
- 1 onion, red, chopped
- 1 carrot, diced

- 1 tsp thyme, dried

Directions
Bring a pot of salted water to a boil and cook the sweet potatoes for 15 minutes until tender.
In the meantime, heat 2-3 tbs of olive oil in a sauce pan and sauté the carrots with the onions for 5 minutes, seasoning with a pinch of salt and pepper.
- Add the lentils, rice, peas and tuna. Season with thyme and add the tomato puree and broth and bring to a simmer for 20-25 minutes, adding water as needed until the lentils and rice are cooked through.
