Ingredients

3 potatoes, medium sized, peeled, quartered
6 cloves garlic, minced
1/2 cup parsley, chopped
5 tbs olive oil
2 tbs vinegar
1 tsp salt
1/4 tsp white pepper

Directions

Boil the potatoes for about 20-25 minutes until tender. Mash the potatoes with a potato masher or in a blender.
Fold in the garlic and parsley.
Add the olive oil and vinegar in a stream.
Season to taste with salt and white pepper. Store in the fridge for up to 4 days and serve at room temperature.
