Ingredients
- 1 pound parsnips, chopped
- 1 (15-ounce) can white beans
- 5 cups veggie broth
- 1 onion, red, sliced
- 3 cloves garlic
- 2 tbs sunflower seeds to garnish

1⁄2 tsp salt

1/4 tsp black pepper
- optional: chili flakes to garnish
Directions
- Roast for 30-35 minutes until golden brown.
Preheat the oven to 400°F. Place the garlic, parsnips, onions, on a baking pan lined with parchment paper. Season with salt and pepper and drizzle with olive oil.
- In a blender process the roasted garlic, parsnips, onions, beans and broth until smooth and velvety. Season to taste.
- Transfer into a saucepan and bring to a gentle simmer for 5-7 minutes.
- Serve hot sprinkled with sunflower seeds, and optionally chili flakes.
