Welcome to summer, friends! Summer is all about enjoying the warmth of the sun and savouring some delicious fresh flavours. For today's post, we're sharing our delightful Halloumi Tarts with Caper and Chilli Dressing – a burst of flavour that will transport your taste buds to a sunny meadow. Our tantalising tart brings together creamy halloumi cheese wedged in between crisp filo pastry shells before being topped off with fragrant seasoning and pops of flavourful capers for extra pizzazz. It's enough to make anyone drool – so take a break from the outdoors and get ready for an amazing foodie experience inside!

Combine the flour and salt in a mixing bowl and add the olive oil and water. Knead to get an elastic dough. Divide into 6 balls. Roll each ball out on a floured surface and transfer into 6 mini tart pans. Trim the excess dough and place the pans in the fridge for 30 min. to rest.
- Preheat the oven to 400°F.
- Prick the dough with a fork. Whisk the eggs and season with thyme. Add two Halloumi slices on each tart and divide the egg mixture into the pans.
- Bake for 30-35 minutes until golden brown.
In the meantime make the dressing by whisking together the olive oil with the chopped cappers and chili flakes.
- Remove the tarts from the oven, and serve hot drizzled with the dressing.
