Ingredients
For the Roll Ups
- 1 cup crabmeat
- 4 whole-wheat tortillas
- ½ cup cucumber, sliced
- ½ cup cherry tomatoes, halved
- 1 avocado, sliced
- 4 tablespoons homemade olive oil mayo

- 1 egg, whole
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon warm water
- 1 teaspoon Dijon mustard

For the olive oil mayonnaise
Directions
Make the roll ups:
Warm up the tortillas in a dry pan, until slightly toasted.
Spread a tablespoon of mayonnaise on each tortilla.
Fill with the crabmeat, cucumber slices, cherry tomatoes, and avocado. Season with salt and pepper to taste.
Wrap tightly and slice into rolls. Serve at room temperature.
Make the olive oil mayonnaise:
- Beat the egg in a blender or food processor for 30 seconds on its own. A stick blender would also work.
Add the lemon juice, water, mustard and oil and process for 30 more seconds.
Gradually pour in the olive oil a few drops at the time while blending until the mixture is emulsified into a thick mayonnaise. Reserve 4 tablespoons and store the rest in a jar.
