Recipe-241-Mediterrannean Tossed Salad

This colorful dish is filled with various vegetables like tomatoes, cucumbers, and onions that are tossed in just the right amount of olive oil and lemon juice. - 6 cups Romaine lettuce, chopped or torn
- 2 tomatoes, diced
- 1 cup Italian olives
- 1/4 medium onion, sliced
- 1/4 cup red peppers, chopped
- 6 ounces pepperoni
1/2 cup olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
In a large salad bowl combine the chopped lettuce with the tomatoes, onions and peppers.
Make the dressing by whisking together the olive oil with the red wine vinegar. Add the Italian seasoning, salt and pepper and whisk again.
- Drizzle the dressing over the salad, top with the olives and pepperoni and serve at room temperature.
