Preheat oven to 350˚F. Prep two bread loaf pans with parchment paper.
In a large mixing bowl whisk together the eggs, sugar and vanilla. Add the persimmon puree and the olive oil.
Add the flour, baking soda, salt and cinnamon and whisk to combine.
- Fold in the walnuts and raisins and pour the batter in the loaf pans.
- Bake for 45 – 50 minutes. Let it reach room temperature and serve.
