Gradually incorporate the dry ingredients into the wet ingredients to make a batter. Let the batter rest for 5-10 minutes.
Heat a non-stick, wide pan and brush with a bit of the remaining olive oil.
Pour dollops of the batter in to make crepes, swirling around to cover all the surface evenly. Cook for a minute on each side. Repeat the same process.
Fill the crepes with the mousse and serve.
