Preheat the oven to 300°F. Place a rack in the middle of the oven and line a baking pan with parchment paper.
Toss tomatoes whole on the baking pan, drizzle with a little bit of the extra virgin olive oil and vinegar and sprinkle with salt.
- Roast for 50-60 minutes until very soft and slightly golden.
Place in a jar and cover with the remaining olive oil.
- Serve with bread and feta cheese.
