Recipe-216-White Chocolates with Blueberries and Olive Oil

Unlike traditional milk or dark chocolate, white chocolates offer a deliciously creamy flavor that melts in your mouth. So forget everything you thought you knew about regular old bars of chocolate - this is something truly special!
1/6 cup cocoa butter
4 tablespoons olive oil
- 1/3 cup icing sugar
- 4 teaspoon milk powder
- 1/4 teaspoon vanilla essence
1/8 teaspoon sea salt
- ¼ cup blueberries, fresh or frozen
Melt the cocoa butter with the olive oil and vanilla extract in a double boiler.
Stir in the powdered sugar, powdered milk, and salt until completely incorporated over low heat.
- Remove from heat and whisk the mixture for a couple of minutes, to get a glossy texture.
- Refrigerate for 5-10 minutes. Whisk again to ensure a smooth, velvety consistency and pour the mixture into the silicon molds.
- Add 1-2 blueberries per chocolate, crushing a few for extra color.
- Refrigerate for two hours to set, or overnight at room temperature (recommended).
- Remove from the molds and serve.
