Recipe-209-Muffins with Olive Oil and Red Currant Jam

- 2 1/2 cups all-purpose flour
- 1 cup milk
- 1 egg, large
- 1/2 cup sugar
1/2 cup olive oil
- 1/4 cup jam
- 1 tspn vanilla extract
- 1 tbs baking powder
1/4 tsp salt
Preheat the oven to 350° F and line muffin tin with liners.
In a mixing bowl, combine the flour, sugar, baking powder and salt.
In another bowl, mix the milk, olive oil, egg and vanilla extract.
- Combine the two mixtures to get a batter.
- Fill the muffin-pan cups one-third full with batter. Drop a teaspoon of jam on top of the batter. Top with the remaining batter.
- Bake in the preheated oven for about 20 minutes and serve warm or cold.
