Ingredients
1 cup pineapple chunks fresh or frozen
1 cup pineapple juice
1⁄4 cup brown sugar

1 tbsp of olive oil
1 tbsp ginger peeled
30g lemon juice
120ml whiskey
Ice to serve
Directions
In a small saucepan heat the pineapple chunks, pineapple juice, brown sugar, olive oil and ginger on low-medium heat.
Stir and allow to simmer until the sugar is completely dissolved.
Reduce the heat to low and let it simmer until reduced and slightly thickened for about 20 minutes. Let it reach room temperature.
In a shaker add the ice, whiskey, lemon juice, and syrup then shake.
Pour inro two glasses and add more ice if needed.
