Recipe-153-Olive Oil Crinkle Cookies
You know what makes a great cookie? Yes, a healthy dose of extra virgin olive oil. These will become your favorite treats, especially when they are freshly glazed and warm out of the oven. Tender yet crunchy, you can easily make them ahead, store in an airtight container and have something sweet ready for the entire week. They are the perfect accompaniment for your coffee and they are easily adjustable to fit your mood! Add cinnamon, cocoa powder or nutmeg to switch them up and keep things interesting!
Mix all the ingredients in a deep mixing bowl using an electric mixer to get a dough. Shape into a ball, cover with cling film and chill the dough for 1 hour.
- Preheat the oven to 360°F and line a baking pan with parchment paper.
- Scoop the dough into bite sized balls and place on the prepared baking pan. Bake for 10 minutes and allow to cool before glazing.
Make the glaze:
Mix the powdered sugar with the lemon juice to get a thick but pourable glaze. Pour over the cookies, let it set and serve or store in an airtight container.
