Mix all the ingredients in a deep mixing bowl using an electric mixer to get a dough. Shape into a ball, cover with cling film and chill the dough for 1 hour.
- Preheat the oven to 360°F and line a baking pan with parchment paper.
- Scoop the dough into bite sized balls and place on the prepared baking pan. Bake for 10 minutes and allow to cool before glazing.
Make the glaze:
Mix the powdered sugar with the lemon juice to get a thick but pourable glaze. Pour over the cookies, let it set and serve or store in an airtight container.
