- ½ cup feta cheese
- 1/4 cup mint or spearmint
¼ cup extra virgin olive oil, plus extra for drizzling
- 4 tablespoons balsamic vinegar
- ¼ teaspoon coarse salt flakes
Preheat the ovens grill to 390°F.
Half the peaches, remove the pits and place face down on a lined baking tray. Coat with the oil and drizzle with half the amount of balsamic vinegar.
- Grill for 5-10 minutes until golden brown and slightly caramelized.
- Remove from the oven and arrange on a serving plate. Crumble the feta cheese on top.
Drizzle with a little extra virgin olive oil and the remaining vinegar. Season with salt flakes and garnish with mint or spearmint leaves.
