Ingredients
2 potatoes, medium sized
- 1 zucchini, large
- 1 eggplant, large
- 2 red onions
- 2 bell peppers
- 2/3 cup tomato sauce

¼ cup extra virgin olive oil
- 1 teaspoon thyme (optional)

1 ½ teaspoon salt

½ teaspoon black pepper
Directions
Preheat the oven to 390°F.
- Slice the potatoes, zucchinis, onions and eggplants into thin circles. Chop the peppers into slices to match the circles.
In a large mixing bowl coat all the slices with the tomato sauce and olive oil. Season with thyme, salt and pepper.
- Arrange the slices in a baking pan and bake with a lid (or tin foil) for about 20 minutes until all the vegetables are cooked through.
- Remove the lid or the tin foil and bake for 20 more minutes until golden brown. Serve warm.
