Ingredients
1 large head garlic

½ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- ½ cup mixed herbs (parsley, rosemary, dill, basil)

1/4 teaspoon salt

Directions
Preheat the oven to 390°F.
Cut the tips of the head of garlic, and place on a baking pan drizzled with a tablespoon of the olive oil. Roast for 20 minutes until tender.
Discard the peel. Place the garlic with the olive oil, vinegar, herbs, salt and pepper in a blender or food processor and pulse to get a thick dressing.
- Store in an air-tight container for up to a week at room temperature.
