Recipe-104-Olive Oil Chocolate Chia Pudding
High in fibre, protein and Omega-3 fatty acids, chia seeds are the ultimate super food along with olive oil. In this recipe we combined the chocolaty goodness of raw cocoa powder with the creaminess of the avocado and the smoky sweetness of maple syrup to make an olive oil-chia desert that will surprise you. Top with seasonal fresh fruit and mint leaves for a super-chic finish.
Process the milk with the avocado, cocoa powder, maple syrup in a blender. Add the chia seeds and pulse for a few seconds to incorporate to the cream. Transfer into a mixing bowl and fold in the extra virgin olive oil in a steady stream. Pour into serving bowls.
- Optionally garnish with fruit and/or mint leaves and serve cold.
