Avocado Plantain Salad

- 2 plantains
2 yellow peppers
- 1/2 onion, yellow
2 tbsp parsley, leaves, fresh
3 tbsp olive oil
2 tbsp lemon juice
1/4 tsp salt
1/4 tbsp black pepper
1. Chop the plantains into bite-sized pieces. Bring a pot of salted water to a boil and cook the plantains for 10-15 minutes, until tender.
