Ingredients
- 2 plantains
- 1avocado
- 2 yellowpeppers
- 1/2 onion, yellow
- 2 tbsparsley, leaves, fresh
- 3 tbs olive oil
- 2 tbs lemon juice
- 1/4tsp salt
- 1/4 tbs black pepper
Directions
- 1. Chop the plantains into bite-sized pieces. Bring a pot of salted water to a boil and cook the plantains for 10-15 minutes, until tender.
- 2. In the meantime, chop the avocado and onion.
- 3. Mix the avocado with the plantains and onions, season with salt and pepper, top with freshparsleyleaves.
- 4. Drizzle with olive oil and lemonjuice and serve at room temperature.
