What to Look for in Extra Virgin Olive Oil

Acidity

Low acidity in extra virgin olive oil is a sign of healthy olives and careful harvesting, indicating a purer oil with better flavor, higher quality, and greater preservation of beneficial antioxidants.

0.27% acidity → exceptionally low, well below the 0.8% EVOO standard and most store-bought oils

polyphenols

917 mg/kg polyphenols is extraordinarily high—most EVOOs average 100–300 mg/kg, with anything above 400 mg/kg considered high quality, putting our oil in the top tier for freshness, health benefits, and flavor intensity.

NON GMO

The olives come from trees that have not been genetically modified, preserving their natural genetics and traditional cultivation methods.

Phthalates
