1. Heat the olive oil in a saucepan and sauté the chicken with the onions and carrots, for 5-7 minutes.
2. Add the driedtomatoes, garlic, olives and couscous and stir to combine the flavors. Add the broth and season with a bit of salt and pepper. Simmer for 15-20 minutes adding water if needed until the couscous is tender and it reaches a thick stew consistency.
3. Adjust the seasoning and serve hot drizzled with a splash of olive oil.
