Recipe-86-Spicy Pumpkin Soup
Fall is in the air and one of our favorite things this time of year has to be pumpkin soup! The combination of spices, creamy texture and earthy flavor make it a cozy autumn classic. And here at ABC Restaurant, we've certainly got something special for you - our Spicy Pumpkin Soup. It's made with love using only fresh ingredients that will delight your taste buds and leave you wanting more! This dish is sure to be an instant classic in your house – so warm up your spoon, curl up under a blanket, and enjoy a deep bowl of this spicy pumpkin soup!
- 15 oz. pumpkin puree, homemade or canned
- 3 cups vegetable broth
- 1 cup heavy cream
- 1 yellow onion, chopped
- 2 cloves garlic, minced
4 tablespoons olive oil, plus extra to garnish
- 1 teaspoon paprika
- 1 teaspoon red chilli flakes
- 1 tbs sugar
1⁄4 tsp salt
Heat the olive oil in a deep sauce pan and sauté the onion for 2-3 minutes. Add the garlic and the pumpkin puree and let it simmer for another 2-3 minutes.
Season with salt, paprika and chili flakes.
- Add the vegetable broth and the cream, and let it simmer over low to medium heat for 10 minutes.
- Using a stick blender or food processor, blend the soup to get a creamy texture.
Serve hot, sprinkled with chili flakes and a swirl of extra virgin olive oil.
