Ingredients
3 squash, large (or zucchini)

1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice

4 tablespoons extra-virgin olive oil
- 1/2 garlic clove, grated (optional)
- 1 teaspoon parsley, finely chopped
- 1 teaspoon dill, finely chopped
- 1 teaspoon mint, finely chopped

¼ teaspoon salt

¼ teaspoon ground black pepper
¼ cup bread crumbs
- ¼ cup Parmesan cheese

½ teaspoon salt

¼ teaspoon pepper flakes
For the herbed olive oil
For the breadcrumb topping
Directions
Make the herb oil:
In a mixing bowl whisk the lemon juice, olive oil, garlic, herbs, salt, and pepper and to combine. Set aside.
Make the topping:
In another bowl, combine the breadcrumbs with the Parmesan, salt, and red pepper flakes. Set aside.
Slice the squash into circles and heat the olive oil in a non-stick pan. Sauté the slices for 2 minutes on each side and continue the same process until all the squash is sautéed.
- Arrange on a serving plate and drizzle with the herbed oil. Top with the breadcrumb mixture and serve warm.
