Chop the cauliflower in small florets. Heat 2 tbs of olive oil in a saucepan and sauté the cauliflower for 5 minutes seasoning with salt.
- Add the garlic and sauté for 1 more minute until fragrant. Add the broth and simmer for 15 minutes. Process with a stick blender until smooth.
In the meantime, mix the remaining olive oil with the paprika to make a paste. Rub the mixture on the tortillas and crisp in a dry pan for 1-2 minutes. Break into pieces.
In the same pan and while it’s still hot add the sunflower seeds and toss to toast them for a few seconds until fragrant.
Divide the soup into serving bowls. Crumble the feta cheese on top. Add pieces of the crisped tortillas and finish with a sprinkle of sunflower seeds. Serve hot.
