- 1/2 cup lentils, brown
- 1/2 cup quinoa
- 1/2 cup corn
- 1 cup tomato sauce
- 3 cups vegetable broth
- 1 onion, red, chopped
- 2 garlic cloves, sliced

- 1 tsp curry
- 1/2 tsp chili flakes

For the mint oil:
Directions
Start by making the mint oil:
In a small sauce pan combine the olive oil with the mint, garlic and chili. Heat over a very low heat for 2-3 minutes. Remove from the heat and let it steep while you make the soup.
Heat the 3 tbsp of olive oil in a saucepan and sauté the onion for 2 minutes. Add the quinoa, lentils, garlic, cumin, curry and chili flakes. Stir to combine.
Add the corn, tomato sauce, and broth and simmer adding water as needed for 20-25 minutes until the lentils and quinoa are cooked. Season with salt.
Serve hot drizzled with the mint olive oil.
