Ingredients
- 10 champignon mushrooms, medium, cut in half
- 1/2 cup red roasted peppers, chopped
- 1/2 cup black olives

5 tbs olive oil
- 1 tbs parsley, chopped
- 1 tsp oregano

3 tbs olive oil
- 1 tbs balsamic vinegar

1/2 tsp salt

1/2 tsp pepper, black
For the vinaigrette
Directions
Heat the olive oil in a skillet and sauté the mushrooms for 5-7 minutes until golden brown.
- Arrange on a plate with the olives, and red roasted peppers and sprinkle with oregano and parsley.
Whisk together the olive oil with the vinegar and salt to make the vinaigrette.
- Drizzle over the antipasto salad and serve at room temperature.
