Ingredients
- 4 cups romaine lettuce, chopped
- 7 oz smoked neck pork chops
- 1 cup corn (if frozen, defrosted)
- 1/2 cup parmesan flakes

- 4 slices baguette bread

- 4 anchovy fillets
- 1 tsp mustard
- 1 egg yolk
- 1 garlic clove
- 1 tbs vinegar

Directions
Preheat the oven's grill to 350°F.
- Place a rack on top of a lined baking pan and arrange the pork chops on the rack, making sure the slices don’t overlap. Grill for 7-10 minutes until crispy.
In the meantime, brush the bread slices with the olive oil and place under the hot grill the last two minutes before you take the pork chops out.
Make the dressing:
In a blender process the olive oil with the anchovy fillets, mustard, egg yolk, garlic clove, vinegar, salt and pepper until you get a thick, creamy consistency.
Make the croutons:
Brush the baguette slices with the olive oil, season with salt and crisp in a dry pan for 1-2 minutes on each side.
- Toss the lettuce in a salad bowl. Top with the corn, pork chops, parmesan flakes and toasted baguette slices. Drizzle with the dressing and serve at room temperature.
