Ingredients
350g Tagliatelle pasta
- 1 red onion
- 1 clove garlic
- 1 carrot
- 1 cup tomato sauce
- 1 cup vegetable broth
- ½ cup cream

2 tablespoons extra virgin olive oil, plus extra to garnish
- 1 teaspoon thyme

1 teaspoon salt

½ teaspoon black pepper
Directions
Dice the carrot and chop the onion. Heat the olive oil in a deep sauce pan and sauté for 3-4 minutes seasoning with salt and pepper. Mince and add the garlic.
- Pour in the tomato sauce, cream and broth. Season with thyme and add the pasta. Simmer over medium heat until the pasta is cooked, adding more water if needed.
Serve hot drizzled with extra virgin olive oil.
