Preheat the oven to 350°F and line a baking pan with parchment paper.
Place the tomatoes, thyme, garlic, and 2/3 of the olive oil in the pan and season with salt.
- Roast for 40 minutes until the tomatoes are golden brown.
5 minutes before you take the tomatoes out of the oven, brush the bread slices with the remaining olive oil and toast in the oven for 3-5 minutes.
- Arrange the mozzarella pieces on a platter and spoon the warm tomato mixture including the juices over. Season to taste.
- Serve hot with the toasted bread.
