If you’re like me, a steaming bowl of Guinness Beef Stew on a cold winter night is the ultimate comfort food. This traditional Irish dish has been around for centuries and each family has their own recipe that they swear by – but one thing remains consistent amongst them all-the richness of flavor and creamy texture it provides. Whether you are an experienced chef or just starting out in the kitchen, this stew is sure to please everyone at your dinner table with its simple ingredients: beef mince, onion, celery, carrots, potatoes and of course – Guinness! Ingredients
- 1 ½ pounds beef, diced
- 3 carrots, sliced
- 3 potatoes, diced
- 2 parsnips,chopped
- 1 onion, large, minced
- 6 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.9 ounces) Guinness Draft
- 4 tbs flour
- 2 tbs corn flour

4 tbs olive oil
- 1 tsp honey
- 1 tbs Worcestershire sauce
- 2 bay leaves
- 1 tsp thyme, dried

1/4 tsp black pepper
Directions
In a deep saucepan heat the olive oil and sauté beef for 7-10 minutes. Add the flour and stir. Season with a pinch of salt.
- Add the onion, sauté for 2 minutes and toss in the garlic.
Turn the heat down to medium and add the beef broth, Guinness, bay leaves, thyme, salt, honey and Worcestershire sauce. Simmer for 30 minutes.
- Add the carrot, parsnip, potatoes and cook for about 30 minutes.
- Dissolve the corn flour into a little cold water and pour in the saucepan, stirring to thicken the sauce. Serve hot.
