Ingredients
1 large chicken breast
- 1 ½ cup parboiled brown rice
- 2/3 cup onion
- 2 cloves garlic

2 tablespoons Olive Oil
- 2 bay leaves
- 1 teaspoon paprika

1 teaspoon salt

¼ teaspoon black pepper
- 1 cup fresh rocket leaves

1 tablespoon Olive Oil to garnish
Directions
Slice the chicken into thin fillets. Chop the onion and mince the garlic.
Heat the olive in a deep pan and sauté the chicken for 3-4 minutes. Season with salt and pepper and add the onions to the pan. Sauté for 5 minutes until golden and add the garlic allowing to cook for 1-2 extra min jutes. Season with paprika.
- Add the rice to the pan and mix well to coat with all the flavours. Gradually pour enough water to cover the rice, add the bay leaves and bring to a gentle simmer, stirring occasionally until the rice is cooked through.
Season to taste and serve warm drizzled with extra olive oil and sprinkled with fresh rocket leaves for a touch of green.
