Recipe-18-One Pot Chicken n Brown Rice
Sometimes the simple classics are the best! This is a great mid-week dinner that will have the entire family licking their fingers. Using only one pot and a few simple ingredients, it will pleasantly surprise you with a burst of flavours and nutrients. We are using parboiled brown rice which is rich in dietary fibre and has a light, crunchy chew. The dish has a little kick from the spicy paprika powder but you can experiment with the ratios or use sweet paprika instead. The spicy one wins our vote but it’s entirely up to you!
Slice the chicken into thin fillets. Chop the onion and mince the garlic.
Heat the olive in a deep pan and sauté the chicken for 3-4 minutes. Season with salt and pepper and add the onions to the pan. Sauté for 5 minutes until golden and add the garlic allowing to cook for 1-2 extra min jutes. Season with paprika.
- Add the rice to the pan and mix well to coat with all the flavours. Gradually pour enough water to cover the rice, add the bay leaves and bring to a gentle simmer, stirring occasionally until the rice is cooked through.
Season to taste and serve warm drizzled with extra olive oil and sprinkled with fresh rocket leaves for a touch of green.
