1 egg, whole
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon warm water
- 1 teaspoon Dijon mustard
1 cup extra virgin olive oil
½ teaspoon salt
Beat the egg in a blender or food processor for 30 seconds on its own. A stick blender would also work.
- Add the lemon juice, water, and mustard and process for 30 more seconds.
Gradually pour in the olive oil a few drops at the time while blending until the mixture is emulsified into a thick mayonnaise.
- Transfer into a clean jar and store in the fridge.
