Ingredients
4 cups zucchini, chopped
- 1 cup crushed tomatoes
- 3 eggs
- ½ cup feta cheese, crumbled
- ¼ cup onion, chopped
- 1 clove garlic, minced

- ¼ teaspoon Provencal spices

1/3 teaspoon salt

1/3 teaspoon black pepper
Directions
Preheat the oven at 350°F.
Heat half the oil a pan and sauté the zucchinis and onions, seasoning with salt and pepper, for 5-7 minutes. Add the garlic last and stir to combine.
- Transfer into a deep baking pot or divide into single –serving oven-proof pots.
- Whisk together the eggs with the crushed tomatoes, seasoning to taste.
Pour the mix over the zucchinis, drizzle with the remaining oil and top with the cheese.
- Bake for 20-25 minutes, until golden brown. Serve warm sprinkled with the Provencal spices.
