2 slices bread
- 1 cup cherry tomatoes
- 2/3 cup chickpeas, canned
- ½ cup feta cheese
¼ cup extra virgin olive oil
- 1 teaspoon thyme
½ teaspoon salt
¼ teaspoon black pepper
Preheat the oven’s grill to 390°F.
- Half the tomatoes and crush the chickpeas with the back of a fork.
Place in a mixing bowl. Season with salt and pepper and coat with half the olive oil. Transfer on a lined baking tray and grill for 5 minutes until the chickpeas are slightly crispy and the tomatoes has softened.
Divide the mixture on the slices of bread and crumble the feta cheese on top. Drizzlw with the remaining olive oil. Return to the oven for 5 more minutes until the feta cheese turns golden brown.
- Season with thyme and serve warm.
