- 2 cups peas
- 1/2 pc leek, chopped
- 2 cups vegetable broth
- 1 cup cream
- 1/4 cup mozzarella, grated
- 2 garlic cloves, minced
3 tbs olive oil plus extra to garnish
- 2 slices bacon
1 1/2 tsp salt
1/2 tsp pepper, black
Heat the olive oil in a saucepan and sauté the leeks with the peas for 3-4 minutes. Add the garlic, season with salt and pepper and cook for a few more seconds until fragrant.
- Add the cream and broth and simmer for 15 minutes. Add the mozzarella and stir to melt.
- Using a stick blender, process the soup until smooth, adding a bit of water if needed.
- Crisp the bacon in a dry pan for a minute on each side.
