Recipe-263-Cod with Leeks, Saute and EVOO Lemon Sauce

- 16 oz cod, fillets
- 3 leeks, medium, white part only, cut lengthwise, cut 3" long each piece
4 tbs olive oil
1 tsp salt
1/4 tsp pepper, black
- 1 lemon, juice
3 tbs olive oil
- 1 tbs mustard
- 1 tbs dill, chopped
1/4 tsp salt
For the sauce
Heat 2 tbs of olive oil in a skillet and sauté the leeks for 5-7 minutes, seasoning with salt and black pepper. Arrange on a plate.
In the same pan, add the remaining olive oil sauté the cod for 2 minutes on each side until cooked through, seasoning with salt and pepper. Arrange the cooked cod on the leeks.
In the meantime, make the sauce by whisking together the lemon juice with the olive oil, mustard and dill. Season to taste with salt.
- Drizzle over the cod and leeks and serve hot.
