Preheat the oven's grill to 400°F. Place the bacon slices on a rack over a lined baking pan making sure they don't overlap. Bake for 20 minutes until golden brown and crispy. Remove from the oven, transfer on a plate lined with paper towels to remove the extra grease. Chop into small pieces. Place the bacon bits with the olive oil and flaky salt in a jar, shake well and let the flavors infuse for a minimum of 2 hours.
- Bring a pot of salted water to a boil and cook the cauliflower florets for 5-7 minutes until tender.
Serve hot drizzled with the bacon flavored olive oil.
