Recipe-87-Festive Potato Salad with Blue Cheese, Figs, Walnuts and Olive Oil

4 large potatoes
- 1 cup fresh, wild rocket
- ½ cup walnuts
- 1/4 cup dried figs, chopped
- 1/3 cup blue cheese
- ¼ teaspoon red chili flakes
4 tablespoons olive oil
½ teaspoon salt
Bring a large pot of salted water to a boil. Scrub and roughly chop the potatoes in large chunks.
- Cook in the boiling water for 30 minutes, until tender. Drain and allow to reach room temperature.
- Place in a large serving bowl, mix with the wild rocket and top with the chopped dried figs, walnuts and crumbled blue cheese.
Drizzle with the olive oil and season with salt and chili flakes to taste.
