Keeping it cosy but fancy, this potato salad with blue cheese, figs and walnuts bathed in golden olive oil is the perfect centrepiece dish to assemble for any holiday or seasonally festive parties you might be throwing for your loved ones. The starchy, simple boiled potatoes are the perfect base for the rich blue cheese and sweet figs to unfold their flavours while the olive oil coats every single ingredient with a silky, glossy film that takes the salad to the next level.
Bring a large pot of salted water to a boil. Scrub and roughly chop the potatoes in large chunks.
- Cook in the boiling water for 30 minutes, until tender. Drain and allow to reach room temperature.
- Place in a large serving bowl, mix with the wild rocket and top with the chopped dried figs, walnuts and crumbled blue cheese.
